A coming soon page template before we launch that we can use to collect people's details and they can pre-register their interest. This would be until we are ready to launch. The simple form would then go into a CMS in the background so we could collect all of the data.

Pippa Van praagh : you can already set your products to "pre-order mode" using the "pre-order-end-date" field. This will allow customers to signup and they will not be charged till your launch date.

Stefan Pretty: kind of ish :-/ what I really am after is a page template that goes over the home page with just tell us if you're interested' and they just leave name and email address for example. I don't want them to explore the sight but I want to capture and build a potential contact list whilst I'm building the site in the background. Does that makes sense? Pippa  Van praagh : it does make sense. I'll update this post so others can vote on it.
I'm not sure an overlay style would work as you'd need to edit the actual site as well instead of just doing a "coming soon" template.
